Indulge In The Ultimate Summer Treat: Black Currant and Honey In Popsicle Molds

My child has been requesting this popsicle nonstop. It is both tangy and sweet, and the best part is that it contains no sugar, artificial flavors, or colors. It's a healthy treat, packed with essential vitamins such as folate, vitamin A, C, K, E, B5, B6, B1, B3, and B2. Additionally, it contains various essential minerals including Iron, Potassium, Calcium, Magnesium, Zinc, and Phosphorus. It's an excellent way to get your daily dose of nutrients!
Black currant is a highly nutritious berry that boasts a tangy flavor profile. However, it can be challenging to convince finicky children to consume it raw. Despite this, incorporating black currant into their diet is well worth the effort, especially given its potential to help prevent colds and flu. Additionally, when the weather is warm, combining elderberry with black currant creates a delicious and healthful treat.
Popsicle Molds
In my quest to provide my family with a healthier alternative to store-bought popsicles, I decided to make my own. I found some sturdy popsicle molds at T.J. Maxx and Aldi and decided to give them a try. In the past, I've had trouble with plastic forms breaking easily, but these new ones are much more durable and resistant to wear and tear. Additionally, their charming appearance made them simply irresistible. Although I cannot provide a link to them online, be sure to keep an eye out for them during your next shopping trip.


This recipe can be turned into popsicles or enjoyed as a smoothie, and it tastes delicious either way. It makes enough to fill four raspberries and three ice cream cones. If you don't have black currant syrup, you can use an extra 1/2 tablespoon to 1 tablespoon of honey to taste. You can also try substituting with any berry syrup you prefer. I'll be sharing my homemade black currant syrup recipe soon. Don't hesitate to try adding different berries to experiment. Black currant goes well with strawberries, blueberries, and raspberries.
Black Currant and Honey Popsicles
Ingredients
1 ½ cups frozen black currants
1 tablespoon honey (to taste)
½ cup freshly squeezed apple juice
1 tablespoon black currant syrup (made from currants and honey or substitute with additional honey to taste)
Directions
Grab a blender and put all the above ingredients into the blender.
Blend until smoothie consistency is reached. If it seems thick and doesn't pour place it in the microwave for 5-10 seconds or just let it sit on the counter for a few minutes to defrost a bit. Optionally you could add more apple juice to help thin it down.
Pour into plastic forms and place in the freezer. Enjoy once frozen.
Tip: to get the popsicle to slide out of the mold effortlessly, run hot water over the cap part or just place the mold in warm water just enough to cover the bottoms and not the handles.
